Abstract
In this study, the enzymatic degradation of guar over a wide range of substrate concentrations was followed using gel permeation chromatography (GPC) and steady shear viscometry. Three commercially available derivatized guars were used: hydroxypropyl guar (HPG), carboxymethyl guar (CMG) and hydroxypropyl trimethylammonium guar (HPTMAG). The influence of substrate structure on the degradation kinetics was successfully explored.
